  1. 500g dried spinach fettuccine
  2. 1 tablespoon olive oil
  3. 1 large brown onion, roughly chopped
  4. 2 garlic cloves, finely chopped
  5. 200g piece provolone, coarsely grated
  6. 65g piece parmesan, finely grated
  7. 1 bunch chives, finely chopped
  8. Ground black pepper, to taste
  9. 50g mild blue cheese, crumbled
  10. 1/2 cup fresh chervil sprigs, chopped

The instruction how to make Three-cheese pasta

  1. Cook the fettuccine in a large saucepan of salted boiling water, following packet directions, until al dente.
  2. Meanwhile, heat the oil in a large frying pan over medium heat. Add the onion and garlic, and cook, stirring occasionally, for 5 minutes or until the onion softens slightly
  3. Drain the fettuccine and return to the pan. Add the onion mixture, provolone, parmesan and chives. Toss well to combine. Taste and season with pepper. Divide among warmed pasta bowls and sprinkle with the blue cheese, chervil and pepper. Serve immediately.
