  1. 250g rice stick noodles
  2. 1 1/2 litres (6 cups) Massel chicken style liquid stock
  3. 1-2 tablespoons green curry paste to taste (see related recipe)
  4. 1 tablespoon soy sauce
  5. 1 tablespoon caster sugar
  6. 1 lime, juiced
  7. 2 tomatoes, chopped
  8. 2 celery stalks, sliced
  9. 20 green prawns (tails intact), peeled
  10. Chilli, to serve
  11. Bean sprouts, to serve
  12. Coriander, to serve
  13. Mint leaves, to serve

The instruction how to make Hot and sour prawn soup

  1. Soak rice stick noodles in boiling water according to packet instructions. Drain and set aside. Place chicken stock, green curry paste to taste, soy sauce, sugar and lime juice in a large pan and bring to the boil. Add tomatoes and celery stalks. Reduce heat to medium-low. Simmer for 5 minutes until tomatoes have softened slightly. Add prawns, then cook for 2-3 minutes until just cooked through. Divide noodles among bowls. Spoon soup and prawns over. Serve with chilli, bean sprouts, coriander and mint leaves.
